Last evening, we had the opportunity to cater a dinner party for a group of women that had completed a 35K walk to end women’s cancers. After a long day of walking they arrived home to a well deserved glass of sparkling wine, appies and a 3 course meal. In keeping with the pink theme of the event (albeit accidentally), Brett prepared a watermelon salad to kick off the dinner. Huge, juicy cubes of watermelon were dressed with a pomegranate and white balsamic vinaigrette and garnished with Fairwinds Farm goats feta and pistachios. The watermelon was topped with micro greens and the plate was finished with mint oil and Maldon Salt.
