ARGENTINIAN CHICKEN

Everyday, a grill in front of this small Argentinian restaurant in Mal Pais proudly displays its butterflied chickens of the day.  I could not resist the temptation each time we walked by.  The chicken is cooked over low heat for about an hour on the cavity-side, then when it is almost done the chicken is flipped meat-side down and crisped up.  This is some of best chicken I have ever had, paired nicely with a delicious chimichurri sauce.
