SPRINGBANK WINE CLUB, EXECUTIVE DINNER

Recently, I had the opportunity to create a menu with wine pairings for the Spring Bank Wine Club’s (SWC) Executive dinner, which happened this past weekend.  I enlisted my good friends Jared Alvey (Executive Chef and Co-Owner of Petite Restaurant (Currently closed due to fire - reopening September 15, 2011)) and Ruby Smith-Merovitz (Private Wine Consultant, Wine Connoisseur, Vin Room All-star)  to participate.  Jared and I worked on the menu and left the wine pairings up to Ruby - her research payed off resulting in some great pairings!  Here is the menu along with Ruby’s pairings.  I am also including the wine shops that stock these great wines as well as the retail price.

Course 1

Butterleaf Lettuce Salad with a Honey, Mustard & Poppyseed Vinaigrette, Grilled Garlic Prawns (wild from the pacific coast of Mexico), Avocado and Heirloom Tomato

Wine Pairing: Qupé Bien Nacido Cuvée, Santa Maria Valley

50% Viognier/50% Chardonnay

Nova Scotia Lobster Risotto with Tarragon and Grana Padano

AAA Alberta Beef Carpaccio served with Asparagus Relish, Grana Padano & Watercress dressed with a Artichoke and Grainy Mustard Vinaigrette

Grilled Broek Acres Pork Tenderloin served on Sauteed Mushrooms, Broccolini, Grainy mustard Spätzle and topped with a Ruby Port Jus
