Festival season is fast approaching and this year Jared (Petite Restaurant) and I are going to be participating in different festivals around the city selling fish tacos and iced tea. Our first festival will be at the 4th Street Lilac Festival on May 29, 2011. With this date approaching in a hurry I have been sampling different types of white fish to see what is best suited to the tacos we want to serve. I was at North Sea Fish on Friday and the guys there gave me some Hoki samples to try. I hit the fish with some cajun spice and threw it in the pan. I served it with a Mango, Red Onion, Mint and Lime Salsa, shredded Cabbage, Sour Cream and piled it on lightly blackened white corn tortillas.
