I am headed off to PEI on Monday July 11 to cook the rehearsal dinner for a friend’s wedding.  On my menu I have an asian slaw with an Ume Plum vinaigrette.  I thought I would test it out last night for dinner alongside some wild mexican prawns.  The dish went swimmingly!  I used fried rice noodles as a base, julienned carrots, daikon, and cucumber, sprouted beans, toasted sesame seed, pickled ginger, and cashews.

While in PEI I am going to visit Colville Bay Oyster Farm, we are going Tuna fishing and  most importantly eating some of the best seafood in the world every day!!!  I will be in Halifax visiting my old pals from the 16th to the 18th!
