CEVICHE

After such a long cold winter, I am really embracing foods that lend themselves to warmer weather.  One of the amazing families I cook for every week requested ceviche this week and I was more than happy to produce.  I used Wild Prawns from the pacific coast of Mexico, Red and Green Pepper, Red Onion, Parsley, Hot Sauce and fresh squeezed lime juice to cook the prawns.  The resulting dish was quite a treat!
