CEVICHE AT THE VILLAGE

Last night was a fairly quiet one at Maderas Village and we celebrated with an intimate dinner for 8. Brett prepared ceviche with parrot fish and served this “margarita” style in a salt-rimmed glass. The intention was to savour the citrus, veggie and fish juice at the bottom of the glass by slurping it back after eating the ceviche. A green salad was garnished with sweet mango and nica cheese and dressed with a papaya-lime vinaigrette.
