Back from Kauai and hoping I still have some of this cultured carrot and burdock in the fridge.  This combination was inspired by one of my favourite things to cook: carrot and burdock kinpara.  I only made a small batch of this and I used carrot, burdock, chickpea miso and a splash of tamari.  I let it sit on the counter for about 4 days and it turned out to be delicious!
