BEET SALAD

Yesterday Brett introduced a beet salad as a new menu item for lunch. The salad incorporates ingredients that are locally abundant such as beets, oranges and avocados. The beets sit on top of an avocado-orange puree and are topped with seasonal julienned vegetables. The salad is drizzled with a balsamic reduction and hit with a little black lava salt.

Luckily, there were a few guests handy to partake in some sampling. One of our happy samplers was our new friend Amy Ludwigson. Amy is the founder of Pure Citizen, an online marketplace for ethical and natural goods ranging from clothing and jewellery to beauty products. Amy and I have shared many hours in our respective hammocks, or what we like to refer to as our “offices.” She running a company and I applying for student loans.
