BEEF JERKY

I recently purchased an Excalibur 9-tray food dehydrator so that I am able to expand my offerings to personal chef clients as well as for experimentation.  While I have not had a ton of time to experiment with it just yet, I have managed to try out a few things.  The most exciting item to date that I have made is beef jerky.  I started out with some naturally raised flank steak sliced thinly, and marinated it in tamari, orange juice, rice wine vinegar, garlic, honey, and chili paste and threw it in the fridge for around 24 hours.  Once that time passed, I took out the meat, patted it dry and threw it on the trays.  I set the dehydrator to 155F and let it do its magic for about 6 hours.  This resulting product was amazing!  Needless to say, there is none left.  Other things I have dehydrated to date are veggie/nut/seed crackers, kale chips and pesto crackers.  Here are some photos of the jerky and dehydrator:
