Kim is our hairdresser in Calgary. 

One scorching hot afternoon in Nicaragua we bumped into Kim who happened to be staying at the same hotel as we were. 

We were thrilled to hear that Kim had packed her scissors and even happier when she offered to “clean up” our hair which had been subjected to a steady regimen of hot sun, humidity and salt water for 3 months. We thanked her profusely and Brett told her he’d repay her with a cooking class when we returned home. Kim requested a lesson on salad dressings after a week of sampling various salads that Brett had featured on the menu at Maderas Village.

Yesterday morning Kim joined us for a light Sunday lunch and quick tutorial on mustard-based salad dressings including a mint-honey vinaigrette with dijon and a maple grainy-mustard vinaigrette. We enjoyed large plates of hearty salad with parmesan crisps and good conversation.
