Yesterday afternoon, Cody and I had a bit of time on our hands and decided to make some ricotta. It was super easy and really fun.All we used to make Ricotta was whole milk, lemon, salt, a pot, a heat source, and a nut milk strainer bag. Here are some photos of the process:
Combine all ingredients and heat.
Once desired temp is reached (185F to 195F), remove from heat and let sit covered.
Hang to let all of the whey drip out.
Whey which can be used for brining other cheeses.
The final product enjoyed with maldon salt, pepper and extra virgin olive oil.
Final product with arugula, tomatoes, chickpeas, lemon, extra virgin olive oil.
Needless to say, there is no ricotta left from yesterdays batch. We are going to make more this week.
