One of our favourite food experiences in Kauai was visiting a stand on the side of the road that specialized in meat smoked in large barrels. The flavour and moistness was spectacular and their coleslaw was surprisingly fresh and delicious. We enjoyed this place so much we visited it twice! The owner’s enthusiasm was awesome and he explained that he was from Northern California and lived in what he called a “hillbilly” community in the mountains. Apparently, in this part of the world it’s absolutely standard to have a barrel in the backyard and people prepare everything from their Christmas turkeys to their everyday dinners this way.
