Marinated Heirloom Tomatoes

Summer days = summer produce. To celebrate the season of plenty, we bring you a recipe for a simple salad bursting with flavour. Grab your heirloom tomatoes and a few other ingredients and you will soon have a lovely seasonal salad. 


Local Heirloom Tomatoes – sliced into ¼” rounds

(We use Man's Organic Heirloom tomatoes from Southern Alberta)

Lemon Zest

Fleur De Sel or Maldon

Chives – Sliced into rounds that are as thick as the width of your chives

Chive Flowers – optional for presentation.  Separate flowers from bunch.

Smoked Arbequena Olive Oil (available at Our Daily Brett)


Arrange sliced tomatoes on a plate.  Zest 1 lemon directly on the tomatoes.  Season with Fleur De Sel or Maldon Salt.  Pour 1 or 2 glugs of a nice fruity olive oil over the tomatoes – I like smoked or regular arbequena.  Garnish with chives and chive flowers.  Feel free to add cheese (Parmigiano Reggiano, Fior Di Latte Mozzarella, Feta, Queso etc.) if you are so inclined.
